Maturation and weight

The maturation time of our cheese starts from 90 days. The weight of the shapes is from 3 to 3.5 kg more or less.

HALF SEASONED SCIVU CHEESE IS OUR FLAGSHIP.

A cheese made by a combination of high quality Sardinian sheep and goat milk, only added by rennet and salt.

The strong flavor, typical of sheep’s cheeses, is slightly acidic in the younger forms and spicy in the more seasoned forms. In addition to the semi-mature cheese you can also try our salted ricotta di Scivu, white and soft paste, to be consumed shortly.

The Secci brothers’ farm has distant origins, those of a family that has been involved in pastoralism for generations, raising native Sardinian sheep and transforming milk into fine pecorino.
