Ripening and Form

The minimum maturation time of our cheese is 60 days. The weight varies from 3 to 3.5 kg. The shapes are cylindrical in appearance, with flat faces 15-22 cm wide, straight or slightly convex sides 8-13 cm high.

Features

The rind, a few millimeters thick and thin, is dark yellow on the outside. The paste is white, soft and compact.

The strong flavor

The strong flavor, typical of sheep’s cheeses, is slightly acidic in the younger forms and spicy in the more seasoned forms. Formaggio di Scivu is an excellent table cheese, both eaten young and semi-mature.
