Ripening and Form
The minimum maturation time of our cheese is 60 days. The weight varies from 3 to 3.5 kg. The shapes are cylindrical in appearance, with flat faces 15-22 cm wide, straight or slightly convex sides 8-13 cm high.

Features
The rind, a few millimeters thick and thin, is dark yellow on the outside. The paste is white, soft and compact.
